A fancy-looking dessert that takes only a few minutes to make.

1 30-ounce can pineapple slices
2 bananas
1 tbsp lemon juice
3 tbsp plus 1/2 cup sugar
1/2 tsp cinnamon
4 egg whites
1/4 tsp cream of tartar

1. Drain pineapple slices and arrange in a large buttered baking dish or cookie sheet. Cut each banana into 5 pieces and place one piece on each slice of pineapple. Sprinkle with lemon juice.

2. Mix the 3 tbsp sugar with cinnamon and half over the fruit.

3. Beat the egg whites with the cream of tartar until soft peaks form. Add the rest of the sugar(reserving 1 tbsp)a couple of tablespoons at a time, beating will after each addition. Beat until the whites form stiff peaks.

4. Spread the meringue over the pineapple and bananas, using a swirling design. Sprinkle the remaining sugar over the top and bake in a preheated 400 degree F oven for 10 minutes, or until meringue is browned. Serve warm or cold.

If using fresh pineapple, peel, core, and cut into 10 slices. The pineapple does not need to be precooked.

Makes 8 to 10 servings.
